|Parmesan cheese is not just any cheese. The name Parmesan may only be used for the real Italian Parmigiano Reggiano. The production process is subject to strict conditions. Parmigiano comes from the Parma region and may only be produced in five provinces. The milk used for Parmesan cheese comes from cows in the region. These cows must be fed grass and pure hay. The raw milk from these cows is used to make the cheese.
This Italian cheese is a delicious and pure cheese, consisting of only raw milk, salt and rennet. Adding additives to improve the shelf life or appearance of the cheese is strictly prohibited. The purity of this cheese really brings out the flavour. Parmesan cheese matures for at least a year, with exceptions of up to four years. Every cheese that leaves the region is strictly controlled for quality. This way, only the best cheeses enter the trade. These strict conditions make Parmesan cheese extra special!
The full flavor of Parmesan cheese has not gone unnoticed. This cheese is therefore often used in the kitchen. The most well-known applications are flakes of Parmesan on carpaccio or in a grated form over your pasta dish. But did you know that the cheese is also delicious in casseroles or to eat out of hand?
Parmigiano Reggiano is often confused with Grana Padano. Although these cheeses are very similar, there are also major differences. For example, Parmesan cheese may only be made in five provinces, while Grana Padano is made in 33 provinces. With an average maturation period of 15 months, Grana Padano also matures for a shorter period than Parmigiano Reggiano, with an average maturation period of 24 months. So you can say that Parmigiano is a lot more flavorful than Grana Padano.
