Cheese is a popular product in the Netherlands. Within the world of cheese there are different types that each have their own characteristic properties. Two popular terms are 'Farmer's cheese' and 'Farm cheese'. But what exactly is the difference between these two? Below we explain the characteristics of both cheese types and what makes them so special.
Farmhouse cheese is a special type of cheese that is made in a traditional way from raw milk. This means that the milk comes directly from the cow without any processing. It is important that this milk is curdled at 30°C within forty hours after milking. Rennet is used for curdling.
The production of Boerenkaas takes place on the own farm, where at least 50% of the milk used comes from the own cattle. It is allowed to buy milk from a maximum of two other dairy farmers in the Netherlands, but never more than what the own farm produces.
Farmhouse cheese has a recognizable shape that corresponds to the shape as described in the GTS file. For example, Gouda Farmhouse cheese has a different, round shape than Leiden Farmhouse cheese. However, a Farmhouse cheese is never square. Another important characteristic is that the cheese carries the GTS label, which stands for Guaranteed Traditional Speciality. This is a European protected name. The cheese also has a casein mark, a mark on or in the rind. If this is missing, it is not a real Farmhouse cheese.
These strict rules ensure that Boerenkaas retains its authentic taste and high quality, without artificial additives.
Farmhouse cheese is also made on the farm, but can be made from raw milk as well as thermized or pasteurized milk. This means that the milk is heated to 40°C (thermization) or 72°C (pasteurization) before use to kill bacteria. As with farm cheese, at least 50% of the milk must come from the farm’s own cattle and milk may be purchased from a maximum of two other dairy farmers in the Netherlands. The location where the cheese is made and where the cows are kept are located at the same place. If these two locations are separated, the distance may not exceed 5 kilometers as the crow flies.
It is important to know that not all cheese from the farm can be called Farmhouse Cheese, because Farmhouse Cheese must comply with specific traditions and guidelines.
