After professional preparation, our matured cheese ripens in peace in the warehouse for a maximum of 4 months. This is where the full and pure taste of this cheese is created. Our matured cheese has a Protected Designation of Origin (PDO). This means that all milk extraction, processing and preparation are guaranteed to take place in Noord-Holland. The cradle of sublime Dutch cheeses for centuries.
