Manchego: the Spanish tapas cheese

Zuivelhoeve We advise customers who want Spanish tapas cheese to buy a piece of Manchego. Manchego has its origins in La Mancha, an area in Spain where a lot of agriculture is practiced. The Zuivelhoeve has both the classic variant (maturation process of 3 months) and the less traditional variant (matured for 9 months) in stock.

Spanish tapas cheese Manchego feels relatively firm, but is somewhat crumbly when cut. In addition, it has a slightly spicy taste. You can taste this taste especially when you have swallowed this Spanish cheese. The cheese is often combined with raw ham, but also tastes good on a piece of bread.

Monte Enebro: cheese from central Spain

Cheese from Spain that should not be missing from our rich collection is Monte Enebro. Unlike Manchego, Monte Enebro is made from goat's milk (and not sheep's milk). The Monte Enebro has a hard, cream-colored rind. If you look closely, you will notice that black 'veins' also run through the crust. These stripes have come in because ash is often used in the production of Spanish cheese.

Another fact worth mentioning is the limited production of this type of cheese from Spain. Only 7000 cheeses are made of this type every year, to keep the cheese unique. In addition, the Monte Enebro has the shape of a (cut) tree trunk, which makes the cheese extra fun. The taste can best be described as fresh, creamy and spicy at the same time.
