The Monte Enebro is a special goat cheese. This goat cheese is handmade by cheese maker Rafael Baez and his daughter Paloma. They use pasteurized goat's milk as a base, after which the cheese is rolled through Roquefortflora. This gives the cheese a special appearance and a special taste. After 21 days of ripening, the Monte Enebro is ready for sale. Only about 7000 cheeses are made every year, which makes this cheese even more special. Monte Enebro has a fresh, creamy and spicy taste.
