Blue Stilton is made from fresh cow's milk. Penicillium roqueforti is added to the curd, this is the fungus that gives the blue veins and taste of the curd cheese. Air channels are then made in the blue stilton with special needles. This ensures that the blue molds can do their job well. The cheese ripens for about half a year, after which it is ready for consumption. In a good blue stilton, the veins continue into the rind of the cheese. The blue stilton has a soft texture and melts on the tongue. The taste of blue stilton cheese is creamy, spicy and brittle.

The combination of blue stilton cheese with port is a very famous one. Blue stilton has a strong taste, so it also combines very well with a sweet counterpart. Think, for example, of pear, apple or honey. In addition, blue stilton cheese is also very suitable for use in various dishes.
