This balsamic maturato, which means matured balsamic vinegar, is a special one of its kind. This vinegar is boiled down for between 72 and 96 hours. This process replaces aging in wooden barrels and allows the vinegar to thicken. This also makes the taste sweeter and the structure slightly more viscous. It is less spicy than a 15-year-old balsamic vinegar, but still full of flavor due to the reduction process. It is made for us from 100% Trebbiano grapes, one of the oldest grape varieties in existence.
